This is one my mom found and it is really good.
Ingredients:
1 lb baby red potatoes, cut into 1 inch chunks
1 lb chicken breast tenders
1 bag (12 oz) broccoli florets
1 can cream of chicken soup
8 oz cooked ham, cut into 1/2 inch chunks
1 c. shredded swiss cheese
2 T. chopped fresh parsley leaves
1 garlic clove, finely chopped
Instructions:
Preheat oven to 350 degrees. In a microwave bowl place potatoes and 2 T of water. Cover bowl with waxed paper and cook for 3 to 4 minutes or until potatoes are fork-tender, stirring once. Add chicken and all remaining ingredients to potatoes and toss to mix well. Put in a 9 x 13 pan, bake uncovered for 50 to 55 minutes or until chicken loses its pink color throughout and cheese begins to brown.

Oh I am so glad you posted this recipe! I love it and I want to make it up here some time.
Thanks Jen...it is on the menu for the end of October! Thanks for all of the dinner ideas too...we used them all on our 2 week plan!
