Apple Cake with Cream Cheese Frosting

Beat until foamy:
2 eggs
1/2 cup oil

Add:
1 1/2 c. sugar
2 tsp. vanilla

Mix in the following ingredients by hand:
2 cups flour
2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt

Add:
4 green apples (peeled and diced)
1 c. chopped walnuts

Bake in a greased 9 x 13 cake pan at 350 degrees for 45 minutes. After it has baked and cooled, spread the frosting on the cake and sprinkle walnuts on top to garnish.

Cream Cheese Frosting

8 oz. package cream cheese
3 tbsp. butter
1 tbsp. vanilla
1 1/2 to 2 cups powdered sugar

Beat with mixer until smooth.
